Thai Meal Recipe

Here’s a recipe for a delicious Thai meal that is easy to make and is always a huge hit with my family and friends! Recipe includes coconut rice, chicken satay, and homemade peanut sauce.

Coconut Rice:

Prep Time: Under 5 minutes

Cook Time: About 20 minutes

Total Time: About 25 minutes

Serves:  4 people


  • 2 cups of jasmine rice
  • 2 cups of coconut milk
  • 1 tablespoon of sugar
  • 1 3/4cups of water
  • 1 pinch of salt


1)      Combine all ingredients in a saucepan and bring to a boil under medium-high heat, stirring occasionally to keep rice from burning.

2)      Once it is boiling, cover and reduce heat. Let simmer for about 18-20 minutes or until liquid is absorbed.

3)      Turn off the heat, but leave the pot covered on the stove for another 5 minutes.

4)      Fluff the rice, serve, and enjoy!


Chicken Satay:

Prep Time: 20 minutes

Cook Time: 15 minutes

Total Time: As little as 65 minutes, depending on how long you marinate

Serves: 4 people


  • 1 lb boneless chicken breast, cut into 12 strips
  • 12 satay sticks
  • 3 cloves of garlic (minced)
  • 1 stalk of fresh lemongrass (minced)
  • 1 teaspoon of coriander
  • 1 teaspoon of turmeric
  • 1 tablespoon of fish sauce (optional)
  • 1 tablespoon of fresh lime or lemon juice
  • 1.5 tablespoons of brown sugar (light)
  • 1/4 cup of fresh cilantro (chopped)
  • 1 tablespoon of low-sodium soy sauce
  • 2 tablespoons of vegetable oil


1)      Combine oil, sugar, lime/lemon juice, minced lemongrass and garlic, turmeric, coriander, cilantro, and soy sauce in a food processor. Blend until it is a smooth paste.

2)      Put this in a bowl and put your sliced chicken strips into the marinade. Cover with saran wrap and refrigerate for anywhere from 30 minutes to 8 hours (the longer the better).

3)      Soak satay sticks in water for about half an hour

4)      After desired amount of time has passed, remove the strips of chicken and place the satay sticks through each slice of chicken.

5)      Grill chicken until it is cooked through, making sure to turn the skewers over on the grill (about 4 minutes on each side).

6)      Garnish with grilled lemon or lime slices, if desired.



Peanut Sauce:

Prep Time: 5 minutes

Cook Time:  N/A

Total Time: 5 minutes

Serves: 4 people


  • 2 tablespoons of soy sauce
  • 1/2 cup of peanut butter
  • Juice from one lime
  • 2 tablespoons of chopped peanuts
  • Chili pepper flakes or hot pepper sauce (to taste)
  • 1/4 very hot water
  • 1 tablespoon brown sugar or agave nectar
  • 1 clove of garlic (minced)


1)      Put peanut butter, lime juice, sugar/agave nectar, garlic, soy sauce, and the pepper flakes/sauce into a food processor. Blend until it all ingredients are combined. While still blending, slowly add the hot water. Keep adding water until the consistency is as thin as you want it (you may need more or less water than suggested depending on your preference). Garnish with chopped peanuts.
