2 leeks; diced
4 cloves garlic; minced
4 potatoes; cubed & in water
8 slices bacon; diced
500ml 35% cream
1C white wine
1 tbsp fennel seed; ground
2 c corn
1 tbsp tarragon
1 lemon; zest
1lbs lobster meat ( and juice)
Start with garlic with bacon and saute. Add in your leeks. Next, you will need to add potatoes and the potato liquid, fennel seeds and corn.
To add some zest, deglaze with wine. Next, you will need to add in some cream and of course the lobster juice.
Simmer for ½ hour. Cook until the potatoes are cooked through. Season to your taste. After all that, add in some chopped tarragon, lobster meat and heat until warmed through or desired heat.
